Options: sub greens for any you may have left over from this summer's garden. Chard and kale are great examples. When in a hurry, you may skip the dressing for this salad and instead use pre-made poppy dressing for similar carb counts and great flavor. Enjoy!
Cauliflower-Bean-Potato Mash This dish is a little bit lower in carbs than regular potatoes and tastes the most like the original mashed potatoes. Enjoy!

Options: sub a homemade mushroom gravy in place of the canned cream of mushroom soup. Either way--keep it simple, and enjoy!
Tofu Pumpkin Pie This pie is 50% lower in carb than traditional pumpkin pie. Options: if you want to go even lower carb, make it a crust-less pie. Enjoy!
Glazed Carrots This dish makes a great substitute for the popular candied yams dish often found on Thanksgiving tables.
